Our organic beef tenderloin comes from cattle raised the way nature intended: roaming wide-open, certified organic pastures free from pesticides, chemicals, and synthetic inputs. How to Prepare Organic Beef Tenderloin

Our organic beef tenderloin’s naturally clean flavour and tender texture shine with simple seasoning and careful cooking. Treat it gently, and you’ll be rewarded with a beautifully refined, melt-in-your-mouth result.

1. Bring to room temperature: Remove the tenderloin from the fridge 30–40 minutes before cooking to ensure even heat throughout.
2. Season simply: Pat dry and season with sea salt and freshly cracked black pepper to highlight the beef’s natural sweetness.
3. Preheat your pan or grill: Heat a cast-iron skillet over medium-high, or preheat your grill to steady, even heat.
4. Add a touch of fat: Because grass-fed beef is leaner, add a small amount of neutral oil or butter to prevent sticking.
5. Sear gently: Cook for 2–3 minutes per side, developing a light golden crust without overcooking the centre.
6. Finish to temperature: Aim for an internal temperature of 50–52°C for rare or 54°C for medium-rare for optimal tenderness.
7. Rest before slicing: Let the tenderloin rest for 5–10 minutes so the juices redistribute, then slice and serve.

This all-purpose blend of spices can be used on anything; vegetables, meat, popcorn...it could even make a dead chupacabra taste good!

We use premium bronze casts to impart to our pasta a lovely porous texture, to which sauces stick more easily. To achieve a classical dente consistency, our artisanal pasta undergoes a slow drying process at 30C for 12 to 20 hours, depending on its thickness. This ensures the center of the pasta stays firmer and doesn't cook as much once plunged into boiling water. Thanks to this consistency, your pasta dishes will be a success, every time. Uses; Penne is ideal for cold salads and cheese or creamy sauces. Distinctives attributes; The difference is obvious when our product is compared to mass produced pasta, extruded in Teflon casts: they are shiny and smooth, which means the sauce can't coat the pasta and ends up at the bottom of the plate instead.
